Struggle plate is when you don't even have a plate and you check the vending machine change return area for coins someone left behind so you can afford the cheapest item in the vending machine.

I had a 14 meal a week plan. One semester, I ran out of meals some weeks and couldn't have a part-time job due to school workload. So, I walked around checking vending machines. Talk about suck. Looking around for 40 cents in spare change for potato chips. I'm doing pretty well now in IT and stuff.
