I'd maybe change the recipe as I've done this in the oven plenty of times, but I like the idea.

30 minutes a long time for nuggets but I guess if you take the cook time for other stuff it's reasonable to do em this way.

I remember Tyson used to have the best chicken nuggets when they were breaded but then they changed to this chewy spongy white meat that has the texture of bubble gum

Why not just cut breasts or thighs into that shape and not do all the blending and adding extra stuff? That's how I make "nuggets" for kids
