How can I stop pot roast from being super fatty

Most fat floats to the top. What some people do is take a piece of white bread and skim the top of the roasting juice. The bread should soak most of it up. Fat is flavor so you do want some in there. Just try finding a leaner piece of meat. Grass Fed/Finished meats are usually less fatty.

How are you cooking it and for how long? Do you use a thermometer, if so what temp are you taking it out at?

And in general, when I'm doing roasts, I always sear in a pan before putting it into the slow cooker or oven...always...
Exactly what I do. I don’t cut anything off though.

buy the right cut of meat

Round roast is the leanest but realize that the fat gives roast its flavor. The best cut to me is a chuck roast which will run you about 40 bucks

OP..

You trim the fat with a nice sized knife before you prep & cook your roast. You could ask your local butcher to do it when you buy a roast at the store.

Same for oxtails, steaks and any other cut of meat...
