It mostly depends on what the item is and whether the taste difference, if any, is tolerable. Like, I fukks with store-brand milk and I haven't had any problems yet from it. Meat? Hit or miss and in general, I try to get something with a name on it in that regard. Canned veggies, bread? Sure, I can do that. Rice and toaster pastries? Nah, it has to be Uncle Ben's/Pop-Tarts brand, respectively.

But in some cases, for example, certain cereals I like don't have a store brand counterpart so I just go with the name-brand stuff.

my wife (rip) did the shopping for years
about half of our groceries were generic
we definitely had enough money
but it was just part of our frugal mindset :mjpls:
so i was down with it

i still buy at least one-third of my groceries generic
personally i've shifted towards buying bulk
costco or sam's club (amazon for out-of-market items)
i know what i like
so i just want to get it at the lowest unit cost :ld:

On certain products, the supermarket will contract with the name-brand manufacturers to produce the store brand shyt. So in other words, you can have the same exact product but just in different labeling and boxes, and then they sell both of them where the store brand is obviously cheaper. They know people are dumb enough to fall for the marketing and branding behind a product.
