You'll be good. Lots of margin for error smoking a big toat. Just makes sure you let it rest for the proper amount of time after you cook it

Yeah, I saw a video on letting the meat sit after you take it off cause it's still cooking inside and gives the flavor time to seep in...:pachaha:
