Fried chicken. I was really craving fried chicken.

I also had to make mac and cheese to go with it, was about to go in the oven with more cheese on top.

Looks excellent

Has anyone watched this show about the history if African American cuisine? Im watching the episode on The Carolina's, rice and the Gullah ppl. The Gullah accent sounds very Caribbean, like Bajan almost.

Keen observation. There is a direct link between Barbados and the Carolinas(especially South Carolina) actually. They ran out of room on Barbados for further sugar cultivation so the sons of the sugar barons went abroad looking to make their mark. A lot of them set up shop in the Carolinas.

It’s the breading, I stopped eating flour and almond and coconut flour not the same.

Coat them in crushed cornflakes and bake them in the oven. You can also try getting gluten free flour and mixing it with corn flour instead of using regular flour.

ETA: also add some potato starch for extra crunch.

Looks great. What is a jacket potato? Just a baked potato? Is this an English/American lingo thing?
