Roasted egg plant is good but you gotta roast it with some other shyt. Like zuchini onions tomatoes squash.

1 Heat oven to 350.
2. Get a hotel sheet, Put it in the oven. You want it to be hot like the oven for roasting,
3. Prep your veggies. Don't peel your EP. You can but the skin is good and it's pretty. Wash everything. Cut off ends and imperfections.
4. Chop everything into squares. Size is up to you.
5.Put all your chopped veggies into a bowl. Stir twice, clockwise. Cover your hands in Olive or Canola Oil, stir twice clockwise again. You should see a shine on the veggies. That means they're coated in oil.
6.Wash and dry hands. Add less salt than you think you need. Stir twice clock wise. Wash and dry hands. Add more pepper than you think you need and stir twice clock wise.
7.If you have Cumin add Cumin. If you have whole Fennel Seeds add those. If not don't worry. Roast in oven for 30 minutes. Check the squash for tenderness, cook until it's soft and golden brown. Add more seasoning to taste.

Believe it or not this recipe is best eaten chilled. How you eat it is up to you. I'd put it over some rice and call it a day or put it in some pasta. Hot or cold pasta. shyt works either way.

Most people don't add tomato or cumin. That's my addition, but I've cooked a lot more of the shyt than a lot of people and I think roasted tomato and cumin set off this boring ass recipe.
