Red snapper in any Caribbean country is fire. Had some in the black region of Costa Rica…some of the best food I’ve had. They served it with coconut rice & beans

I've been obesses with that since jurassic park. but i avoid it now for several reasons. One i think it was almost fished to extinction after that rise in popularity, 2) due to the scarcity it became crazy expensive, and 3) the mercury levels are so high, doctor recommend you eat it no more than once or twice a month.
Which means for me, that is a rare treat that i have maybe every few years or so.

It's been sustainable for years now

Truth, I went to a nice restaurant and tried it, nothing special about it at all.

Maybe just a bad draw I don't know.
