The closest we'll ever get to being in the studio for a classic and a should've been classic is the Pet Sounds and Smile Sessions box sets from the Beach Boys. Frankly, it seems pretty boring- take after take, good takes cast aside for minor imperfections, etc. But it's somewhat interesting to have that view into the studio, and Pet Sounds is worth it just for the Acapella versions.
