What kind of site? Simple info page or functional stuff like logging on with an account, ordering products with a credit card, saving data to a database?
Create some kind of contract, just to keep everything transparent. Both of you need to sign it. It's only $250 but you can take that contract to small claims court. Or she can take you to court if you didn't fulfill your end of the contract. That way, she will also sign it.
You need to specifically map out, "These are the things I am going to provide". Anything outside of that needs to be done on a separate contract. You want another page? That's going to cost her.
You can map it all out so she doesn't have pages or functionality she doesn't need.
Who is going to host the website?
You have to watch out for sneaky stuff like doing all the development and not getting paid anything if she backs out.

Never messed with GoDaddy but I think it all ties back to cpanel anyway
