Come to think of it...
...I'm trying to think of the last time a heel turn on someone legit shocked me. I think it might have been Evolution turning on Orton in 2004. I knew it was bound to happen, but they had Randy out there earlier in the night cutting a heel promo and he won his rematch with Nobody due to heel tactics, so I was surprised that they pulled the trigger so quick. The crowd was legit cheering Evolution too due to all of Randy's antics that night. 
I guess before that it might have been HHH turning on HBGOAT back in 2002. As soon as HHH kicked Shawn and set him up for the Pedigree, I knew HBK's return to the ring was upon us.
