Tbh what makes the taco good is the salsa... Most legit taco stands have average salsa... There is one taco truck in my city that has the best salsa I ever tasted and I've been to Mexico... I think the people are from Oaxaca, simply the best.

A lot of states from Mexico have a different way they do things with there food.. For example some states do there guacamole that looks runny, some states there is more thicker and chunky.

I used to goto this spot in Denver called Taco Junior that sold authentic tacos. It was good and I loved the red and the green sauce it came with and the radishes
