You cannot tell the difference between "Authentic" Mexican & Italian food vs. their generic versions.

You can tell the difference between authentic Indian food vs. generic

You can tell the difference between authentic Cajun food vs. generic

You can tell the difference between authentic Soul food vs. generic

You can tell the difference between authentic Caribbean food vs. generic

African, Southern, and the list goes on.

When it comes to Italian food, I've had "authentic" Italian and that shiit always tastes just like the bullshyt they serve at Olive Garden. It's hard to do anything different when 90% of your dishes is just Meat, Sauce, Cheese, & Pasta. You never hear people say, "Oh there's this Italian spot..." Nope. It's always just whatever Italian spot you see, will do.

Same kinda goes for Mexican. Not as much as Italian though. I've had "authentic" Mexican from hole in the wall Mom & Pop spots and even in Mexico, and it's not much different than what you get at many generic Mexican restaurants. There is some difference, but not anything major. Again it's hard to really do anything different when 90% of the dishes use the same ingredients. Meat, Cheese, Peppers, Tortillas.
If you can't tell the difference that's on your palette.

WTF is generic Indian food? You mean like Patak's in a jar. You can tell the difference between that and authentic but not Chef Boyardee and homemade sauce?

....and anyone should be able to tell the difference between canned salsa and kitchen made.

The Italian food in Little Italy vs Olive Garden here in San Diego are night and day different. Olive Garden is over salted, bland trash. And authentic Mexican food is far different than the generic shyt you get at chain restaurants. Hell authentic Mexican fast food (taco shops) shyt on chain Mexican restaurants.





I came in here thinking you were going to have a conversation about the tomato and it’s introduction to Italian cuisine. Silly me.

I would say Olive Garden is closer to real Italian food then Taco Bell to real Mexican food.

Also lets not forget Italian restaurants use San Marzano tomato sauces whereas Olive Garden uses cheaper tomato sauces. If you're ever cooking pasta for yourself I def suggest spending an extra dollar or two for the San Marzano canned tomato sauce. Garlic, bay leaves, black pepper, tad of salt, and sugar and you're gonna have an amazing sauce. Throw some butter in there 20-30 minutes before it's done, and then throw some fresh basil in there at the end...
