First and foremost…. I’m pretty sure tendernism applied mostly to beef ribs… now are you talking about beef or pork… and who told you that was the right way?
Years of experience, barbecuing in Texas, interacting with numerous barbecue chefs, competitions, and owning a barbecue restaurant.....satisfied? And we are talking about beef and pork ribs. Not saying that someone can't enjoy overcooked ribs. If you like it fine. But they ARE overcooked. Just like a well done steak is overcooked. YOU can still like it. But it's overcooked. And that's what buddy in the video said. Yall can eat dog shyt for all I care. Just don't claim it ain't dog shyt.

Overcooked steak is dry and bad.

This is just a preference and it’s mostly about esthetics, and BBQ competition culture.

falling off the bone is good for some shyt...Ribs not so much. I be smoking ribs...once you had em how they sposed to be, you never wanna go back. Them overcooked shyts be all mushy and gross. They don't even cut right. Smh
