There's fat fukks out there with quick 1st steps. I've seen the slowest unathletic old guys beat people with their first step consistently.

1st step is different than speed as noted by OP.

A good NBA example of a big guy with quick 1st step is Shaq. He used to beat players smaller than him with his first step. Zack Randolph destroys Griffin with quick 1 step moves, I remember Chris Gatling would beat people with quick moves and first steps as well.

Brons had a first step during his first time in Cleveland. He just was slimmer back then

He really didn't. He was a little more fluid and explosive than before he put on all the upper body strength, but from a standstill against good 4th quarter defense he was never quick enough to consistently beat locked in defenders to the spot and was forced into shooting over the top. Think about how many charges LeBron has had called on him trying to be quick. He is the most unstoppable full court player ever because he generates so much force on the move when he has a step, but in the halfcourt it's about quickness to get that step and Bron has never had much shake to be able to consistently do that.

Also, Lebron's first step is a tad underrated. Lebron would be blasting by people if they consistently guarded him like they did Melo.

Lebron is being guarded looser, with most of his opponents more scared of his drive than his shot, so his first step doesn't look as quick.
