How them burnt ends looking chefHe is certainly talking about various meats. Chicken, beef brisket, low and slow.
For short cooks it's easy. For 8+ hour briskets, it's hard tI have an empty stomach especially just smelling it all damn day. But if you just eat haphazardly when it's finally done you're not even that hungry. And the worst part is having a bunch of hungry motherfukkers around conveniently when the food is done and you're not that hungry, but your looking forward to the leftovers, or eating later in peace. ( I like to nap and shower then eat after long cooks, or just chill and eat the next day by myself with a good show and peace and quiet)
Hickory smoked chicken. Maybe a little pecan. Just seasoning, no sauce unless I'm doing it Memphis style.
