One thing I never understood in baseball

How come during a stolen base attempt the outfielder doesn't run to the bag once the catcher begins to throw it just in case the ball gets away

Because the hitter can still hit a ball in the outfield at the same time of the stolen base attempt.

they do, after they are sure the ball is not going to be hit they have a couple seconds to try to cover ground

if a team is real savy and pitches out, they might alert the center fielder that they are goign to throw out to the catcher so they can catch a base stealer but I dont think that happens much

Because a runner stealing second is going to slide and even if the throw is inaccurate the runner will not be able to advance a base without getting caught.

Well,

The centerfielder does back up the throw to 2nd base.
But...he can't sprint to 2nd because it's not like the throw goes straight to center field all of the time. (or any base, really)

Often a ball could bounce off the bag, bounce off the runner, it could take a weird hop and skip left or right, the throw could have a bit of a curve to it...

Even if the catcher's throw is just a few feet off, the wrong play by the center fielder makes a stolen base a virtual automatic 2-base error and a run will score.
It's just not worth it to get that close to the bag while backing up the infielder.

I'm talking about after the catcher catches it and begins to throw it
I never seen the centerfield cover 2nd base
And 50% of attempts at 3rd base end up with the run scoring because the throw often gets away and the leftfielder doesn't cover

Centerfielders always cover, they're just never in frame because it's dangerous to get too close to the bag in the event the ball doesn't go straight to them.

and 3rd base is an even more dangerous position to back up the throws.
They do it, but the sidelines sometimes jut into the field at weird angles so if a throw bounces off a sidewall, the ball goes toward center or SS. So it's tricky to begin with.
