Mannnnnnnn listen - I tried to make a sweet potato pie using my moms recipe and failed miserably. That ish came out the oven like sweet potato custard or pudding on dough - first off,

I didn’t use enough sweet potatoes and for some reason, it was too watery. So I must have used too much cream. I didn’t use any brown sugar- I didn’t even know that was supposed to be in the recipe, so thanks for putting me on just now

this usually means a combo of too much milk & eggs vs too little flour
brown sugar is a must imo; you can use white sugar but it lacks that deep flavor of dark brown sugar (also white sugar alone makes the pie come out looking lighter, almost orangey), light brown sugar come out somewhere in between the other 2 sugar mixes. You can do part dark brown sugar + white sugar too, if you like.
I was trying to experiment. Then I didnt put enough sugar and put too many eggs. Too much nutmeg. I called myself trying to spice it up by adding egg nog to the sweet potato batter. That didn’t help. I’ll try again for the winter holiday. My pie was a catastrophe disaster b.

im a modern working woman, I wasn’t meant to be preparing holiday meals days in an advance- order the family a Popeyes Thanksgiving turkey and hit up the local soul food/ barbecue spot for Mac n cheese and ribs. Buy the “glory” brand greens in a can to heat and serve delivered via grocery app. Put a few dabs of hot sauce in it to front like I made it from scratch. All of this done from my laptop, no lines or grocery store hassle. Meal complete in 2 clicks. 10 hours in a kitchen - I think NOT.

by the way, this is a solid sweet potato pie recipe w/o all the extra stuff some people put in their pie
Sweet Potato Pie | I Heart Recipes
Filling
- 1 lb sweet potatoes peeled & chopped
- 2 medium sized eggs
- 1/2 cup evaporated milk
- 1 tbsp pure vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 cup granulated sugar
- 8 tbsp salted butter softened
My thoughts:
1. You need like 3 medium potatoes for one 9 inch pie crust (4-5 potatoes can make you 2 deep dish 9 inch pies)
2. Sugar you can either do 1 full cup of dark brown sugar or 1/2 cup dark + 1/2 cup white or even 3/4 qtr cup dark + 1/4 qtr white
3. As far as the milk part goes you can use 1/2 cup of regular whole milk, 1 12 oz of evap milk (best option) or 1 12 oz can of sweet & condensed (I find this milk overly sweet so I don't usually use it in this pie)
4. Some people put ginger and/or all spice in their sweet potato pie, I usually leave that out

5. Make sure to roast the potatoes in the oven at like 400 for like an 1hr 30 minutes or until they become soft. Some people boil their sweet potatoes in water, and that actually ruins the flavor and can make them watery.
