Merciless is best played for NG+ playthroughs.
Playing on that for first timers especially to this style of game is going to be frustrating as shyt.

I'm not that far in just got the third character. But to ya question as long as the enemies don't get the drop on you on the field screen ambushs don't occur unless it's a story based ambush. The crits though you can't prevent that. Its purely random. I actually lost the second fight cuz of it.

Don't have shields yet can't answer that. And when u die you go back to the title screen and you lose a ton of progress depending on ya last save. I had to replay a good portion of it due to that first wipe. I can def see this being cheesy at certain points depending on enemies and bosses. But no pain no gain.

Regular battles you can start back from the last safe room.
Boss battles you can retry the battle, start from safe room or go back a week in-game.
