I still haven't seen a video that can do the knuckleball justice. When you see it live and can actually see the rotation, it looks like you see 3 or 4 disconnected snapshots of the ball as it comes to the plate. Since it doesn't rotate, the center of gravity varies and it doesn't take a consistent path. I've seen pitchers throwing them where the catcher can't even get a glove on it. On tv, it typically just looks like a slow pitch.
