Red velvet is a chocolate cake.

No it's not, red velvet where you can really taste the chocolate is a deviation from the original red velvet cake. A red velvet cake is basically a buttermilk cake, the cocoa is to provide a slight boost to color, ads a bit of depth, and up the tang (acidity)
