What is really left for phones to improve on? I kinda feel like smartphones hit an innovation ceiling 6 or 7 years ago, with changes since then being very minor.

Lot's of things left to improve on. Number 1 thing is having a bigger battery in a small form factor and continuing to improve software fluidity.

Because of the price difference of the two products(especially if you pay monthly on an iphone) this isn't a fair comparison at all.
You crack the screen on a samsung you probably can afford to buy a new phone because you didn't drop nearly a grand on it in the first place.
