Years ago..I used to work with this military white boy. He used to complain to me that his wife can't cook too good. Saying she don't season meat the right way. I shook my head. I told my mother about thus..she makes a ton of food during the holidays..she felt sorry for him and I gave him one if her plates...her yams....if she sold her candy yams nationally, she would be famous. Definitely.

-She ain't make a stock: bell pepper, yellow onions, celery sautéed until tender in EVOO and bacon; added the smoked meat: Hammock or turkey neck/wing/leg with generous spices: Garlic, Thyme, Creole Seasonings, Tabasco Sauce. Red Pepper flakes. Cooked until the meat falls off the bone.
