But i suck at interviews. I'm not good at coming up with stuff off the top of my head.

And if you lack the concrete examples, find something near enough. That's why it's important to really revise your job history and everything you've achieved prior to the interview.

I agree send a thank you email to each but keep it short and don’t get extra. Something like thank you for the opportunity the position seems great please keep me in mind. It doesn’t cost anything and downsides minimal.
