There are Americans that eat nutria and those are basically gigantic river rats the size of beavers.
Cuisine is based off local resources.
Those smugglers/restaurants could rebrand using local bushmeat (squirrel, deer, nutria anything we’ve got too much of somewhere ) and get praised for eco-consciousness and local sustainability blah blah, get some good press instead of risking disease to livestock, pets and the human population.
