It's not so much the show is fake, but they tell the guests to act over the top. If you're not animated, you won't get on the air.

Maury and Steve are very real unfortunately. The biggest difference between the two are that Maury mostly stays neutral on the deadbead and hoodrat guests of the day, Steve has 15 minute segments going in on them and public shaming them infront of the crowd.
