Just got another idea. Why dont he go to some medium sized city (not a major city) and have a football camp. Train rich cac kids and charge their parents grip. Like Michael Jordan does with the middle aged cacs he has his basketball camp for.

In my opinion the hardest thing to do in business is building a brand and finding paying customers. He already has a brand and the reputation of being a GREAT athlete. Leverage that and get paid. He can pretty much put his name on anything Football related and it will sell. Especially to aspiring football players.
