Your answer: they're entertaining
You could/should care about them for that very reason as individuals as well as a collective. Plus all three as individuals can go in the ring when given the green light and can be very entertaining in other spots. 
You can say this about any wrestler on the roster, be they black or white.
Why target the highly successful black group

You are right. But its not really their fault. Look up and down the roster and you cant say anything about anyone. Nobody has a character let alone any depth
As individuals they have nothing. All we know about them even as hardcore fans is that Kofi used to be a fake jamaican and Xavier Woods likes videogames. Big E outside of the preacher voice has no character.

Imagine 20 years ago Bret "freakin" Hart. Creative is at an all time low and is just appealing to kids and manchildren
