Stems are basically each sound of a song seperated on different tracks so that you can raise, lower, isolate, etc each one however you please.

When you export the individual elements of a beat (kick, snare, hi hats etc) separately. Those elements are called stems. Producers send rappers the stems so their engineer can mix the vocals better to the track.
