I think as the pod grew, Joe felt the percentage split would have given out too much money to Rory and Mal, so he starting moving funny. Which is wild in itself since they have a profit percentage sharing contract

This is basically what it comes down to. Doesn't matter if you feel like Rory and Mal are overpaid. If you have a contract based off percentages of profits, how can you not show the books?

Joe didn't want the expense of Rory and Mal. That's what the situation seems like to me . If you are profit partners the books need to be shown.
