FMA is a good watch because if gives more attention to the early part of the story that Brotherhood glosses over. It isn't superior though.

I think the pacing, character development, tone and soundtrack are all better than Brotherhood

Brotherhood got some strengths that the OG 2003 don't have too, don't get me wrong. I'm just titillating with the title

That's because they didn't really want to heavily recover the same material in Brotherhood so they glossed over the beginning. The original falls off when it turns to anime original plot. The majority of the best moments in FMA are in the portions of it that Brotherhood covers.
