In my experience jewish people have been reasonably forthcoming about the fact that their culture is heavily involved in the banking and entertainment industries.

The reason given for this is that first banking then entertainment (Hollywood) were seen as morally degenerate professions not fitting for "goodly" catholics and protestants. Jews couldnt get other jobs for a while, so outside of crime those were their hustles. So they got on early, and cashed out

That's not exactly it and you really shouldn't accept "the PR version" of stories.
They WERE in a criminal class, socially...and no, it wasn't just "banking", it was called Loan Sharking and extortion.
They were neck and neck with Italians at one time. Did they just stop or go "legit" like other white ethnic groups?
The money-changer/jeweler thing is a smokescreen and charm story.
