You telling me he was normal before that? I've not got clips from his shows, but he went on these as sensitive cac's call them "rants" back then as well.
Dude loses control sometimes, but most of the times I think he says what he thinks for entertainment sake even if it's some dumb shyt like "yeezus is my god name". While someone like Jay rarely says what he thinks, cause cold and calculated is the style he built. While Kanye came out as completely honest.
It all depends on what theme he's got for the album, for WTT he didn't say or do anything stupid. It was all black excellence, same with MBDTF that was when he rocked suits etc.. Now he's on his hipster/rockstar/fukk everybody steeze. Almost like a "method actor", he goes into the role of the music he's releasing.
