Whatever they're most interested in and capable at excelling in. World's best basket weaver will make more than the world's shyttiest doctor. 
Anything you pick based on potential future earnings, the economics of which could/will change moving forward, is pointless if your kid sucks at it, can't do internships, has a trash GPA, etc.
