Every restaurant I ever worked at with flat grills had bug out nights. Open up in the morning there would be roaches all over the grills, of all sizes and often different colors.
Only restaurant I ever worked at with no bugs would be a brand new building that just opened up.
Even worse would be deep cleaning in the middle of the day. All types of toxic chemicals being cooked into the food.

When I was in my late teens, one of my older homies asked me if I wanted to make a few hundred for a day’s work. I said definitely. He was an exterminator so I should’ve known some bs was coming. We went to this building in Brooklyn and I helped him clear out a bunch of dead rats that were in the basement. He had already done his thing with poisoning them. They were EVERYWHERE. Most were dead, some were dying. We were using shovels and putting them into bags.
