This is true,,in Spain in every kitchen at home they have a whole cured pigs leg hanging and people just slice of pieces when ever they want..


Yup. You can even find these legs at supermarkets. I grew up in Spain and from time to time we had a whole leg at home. Not so often though cause they are expensive but from time to time we had one. They cook and prepare pork in a lot of great ways in Spain.

oh man ribs. i picked sausage tho but i forgot about ribs

my mother makes this dish called "locrio"

its basically ribs cut into small pieces cooked in a big pot. u throw them in there with some seasoning and cook them at a high heat to brown them up, then u add water and rice and just let it simmer for a couple of hours.

fall off the bone tender ribs with the pork flavor infused into the rice

I wouldn't be able to make the choice. If a there was a gun to my head I'd go baby back ribs followed closely by pork chops (honey and rosemary glazed) then bacon.

Never had chitlins, but I've had trotters and pork head (affectionately known as "smiley" down here).

I try to eat chicken and fish mostly but after reading this thread I am going too have to cook some pork tonight. shyt I might get some bacon for breakfast over the next few days too.

I'm from Madrid originally. But I've been living in London for the past 13 years.

A great Spanish dish that I've never tried yet is "Cochinillo" which is basically a whole baby pig. They put the whole pig in a pit and cook it. The equivalent to veal with beef I guess. They do it with baby goat too for those who don't eat pork. But apparently Cochinillo is amazing. Next time I go to Spain, eating that dish is on my to do list.

Wow, that's awesome. Finally someone who knows Madrid on this forum. I was the only one for a long time. I grew up in Majadahonda for like 6 years, in Calle Del Cid. Then my other 6 years were spent in Hoyo De Manzanares in the Sierra. I have more memories of Hoyo, since I was older when I was there and had a lot more friends.

I left Madrid in 97 when I was 12 and I haven't been back since summer of 2000. I'ma try to go this year before the year is over. My older brother still lives in Madrid, he lives in central Madrid right now, I forget the exact name of his barrio though. He used to live in Usera but he moved from there.
