What I use for the Dashi (from Amazon). One packet with two cups of water:
Shimaya Awase Dashi Powder (Bonito and Kelp Soup Stock) [English instructions on the back] 1.48 oz (6 gram x 7 packets)
What I use for the Mirin (from Amazon):
Ohsawa Genuine Mirin, Organic Sweet Rice Seasoning Wine for Traditional Japanese Cuisine, Aged over 9 Months for Umami Flavor –Traditionally Handcrafted, Non-GMO, Gluten Free
