Gundam breaker easily. Check out gindam breaker 4 just came out last year.
It uses the model kits and lets you mix and match parts. It’s a slasher looter type game (think dynasty warriors but with gundams)

From other mobile unit parts? Gu dam breaker 4 came out recently, and it's know it's out for pc, switch and the ps ecosystem. Not sure about the Xbox though

A gundam game would need to play more like Mechwarrior 5 than Armored Core if it wanted to be truer to how Gundam feels.
