I also gotta co-sign Zuko since the OP mentioned him. Brilliantly written character.
It might sound slanderous, but Piccolo had the best redemption arc in Dragonball by far. Vegeta was way more interesting before he fully switched sides IMO.

Since finishing the Chimera Ant arc, I also have to nominate...

"redemption" might be stretching it, but the way his character evolves over the course of that arc is so well written that nothing I could write here would ever do it justice.
