Which southern state and/or city has the best BBQ?

All of it :wow:.

I'd only give Texas the nod because I'm biased. Plus TX has different styles within the state. Traditional 'southern-style' with hot-links, ribs, chicken, chopped beef etc (mainly East Texas) is my favorite. More of a tangy/spicy sauce that's a bit thinner.

Most outsiders think of the Czech/German/Black style of Central Texas (brisket mainly with burnt ends, ropes of sausage and jalapeno sausage and minimal sauce....since the white Euros immigrants didn't really know how to make good sauce tbh). Mexicans got their own shyt with barbacoa and cooking with bbq pits in the ground.

KC and their sweet sauce is probably what most people think of when you say "BBQ." That definitely has to count for something..basically the default BBQ.

Haven't tried Memphis or Carolina-style (I don't think so anyway). Gotta do that soon.

You can get rib tips on the south side of Chicago better than most of the bbq in the south.

Chicago gumbo is the worst. Honestly all their soul food and bbq us pretty bad considering all the Black living here with Mississippi roots.

I know an older NO couple that own a bakery in South Loop. Everytime I stop in we laugh at all the terrible mac n chesses around town. The man told me he even saw gumbo with a tomato base like jambalaya at a so-called cajun restaurant (thats another topic in itself) here lol. I laughed so hard...

You think being in an international city plays a part? Cause basically a lot of people bring the food there.

were these chicagoans cooking bbq passed down from their families in the south or was it something they learned being in Chicago?

They're all different but what I really found fascinating is how deep the differences go. There's a youtube channel I shared on here before, this breh is literally a rocket scientist but also a pit master. He did one video on the nuances of Carolina bbq depending on where you are/from. Imma find it
