That is Gordon's role on the show. It is a persona to move good food out to diners in real time while making entertaining tv. He behaves differently during dinner services and eliminations than at other times. Gordon is more polite to his servers and assistants who are not competing for a $250,000 job. "Service please."

In life, it gets to a point where you've just had enough of people's bullshyt and lash out. It seems like he's put up with a lot of shyt and wasn't prepared to take it anymore.
People like Gordon Ramsey who think it's OK to just cuss and insult the next man always come across that one person who won't stand for that bullshyt and pull their card and will probably connect one in their face. Career prospects or not, you don't let muthafukkas talk to you like shyt, end of story.

let me get this straight. you respect someone who voluntarily signs up to a tv show about cooking hosted by a guy that basically curses the shyt out of contestants for entertainment and ratings?

He kept saying "They know who they are" because Joseph didn't want to snitch/rat out the group. He didn't realize that viewers in tv land need a verbal summary from a contestant. [The show proceeds as if rv viewers were not privy to the deliberations.] He did not realize that reporting back as a spokesman is not snitching (a violation of Boston Irish Southie code).
Other indicators that he was avoiding a perceived traitor role: "There was no peer pressure. We are all men here." He was needlessly defensive in an effort to dodge being the voice that nominated someone in his "battalion."
