Why do restaurants disrespect Mac and Cheese?

Golden Crust in Atlanta does a decent job.

There’s another Jamaican restaurant in the A that had great Mac and cheese on the East side. I forget the name of it. It’s in Edgewood and isn’t a chain.

Other than that, hard pass.

Dunno if you can even say they fancy it up, most restaurants even the "fancy" ones sauce it up into a soupy, flavorless, casserole-like concoction. Dunno how so many restaurants defy the physics of flavor, with the amount of cheese that usually goes into it.
