I mean chicken and lamb is supposedly healthier than beef and pork... but that's what I've heard I dont have lamb that often.

Somewhat. They cook the meat on that little rotating thing*, so you'd have to mimic/ hack that part, but I seen (and tested) a few recipes.

I'm still working on the white sauce, but the recipe over at Serious eats is a good starting point. I tried another one too, kinda mid.

Literally had some Gyro Meat (lamb/beef blend) yesterday. So good with the Tzatziki sauce and basmati rice...even better if they include hummus.

Was in Greece two months ago and had a chicken gyros almost every day after our day at the beach,Crete has the best gyros imo. Shoarma and gyros taste totally different by the way,I see people confusing the two a lot Egyptian shoarma and Greek gyro use different herbs and condiments.
