1, Street Fighter series (orginal being the best.. still playing 4 though)
2, Shenmue series (2 being the best)
3, Super Mario series (3 being the best.. but 64 being up there)
4, Panzer Dragoon Series (Saga being the best and most underated video game ever)
5, Nights into Dreams (Sega's best game... you needed to give it time an undertand the A life)
6, Zelda Series - Specifically the orginal on NES and then the SNES version)
7, Virtua Racing (AM2 arcade game) Was just awesome at the time...
8, Tetris - inspired alot.. including Puyo Puyo at the time.. and now the brilliant Candy Crush
9. Radiant Silvergun - The best shootemup ever..
10, Super Mario Kart (original SNES version)

SIde note - nothing on PS develped by SONY has ever amazed me..
Same with XBOX..

List is based not just on overall how good the game is, but it's impact when I first played it. SC2 was a fighting game like nothing I'd played because of the quest style mode that had a travelling fighter plot (Tekken 3 would be close because of the extra modes). The rest I think are fairly self-explanatory.
