I think Griff will definitely win the iron throne, leading to another dance with dragons once Dany gets there.I think Cersei definitely blows up/burns the Sept in the books. I'm leaning towards burns because I think Cersei's enemies suffering and dying in a sea of wildfire is the type of shyt that aligns with Grrm's storytelling.
I honestly believe Cersei blowing up the Sept is one of the major plot points George gives D&D. We know Cersei knows about the wildfire reserves, and I think it's ironic and devastating to Jamie that she essentially commits the act that he killed Aerys for. Also keep in mind that Jamie is the reason she knows about the wildfire in the first place
I'll be honest once I realized that Griff was going to be completely left out of the show I stopped thinking about himI don't think he has any significant effect on anything. Sure maybe he makes a little noise in Westeros, gets a few banners added to his cause, but to completely erase him for the show tells me his arc reaches a sharp dead end on some Bernie Sanders shyt
. I do think the writers liked the idea of Jon Connington having greyscale and just transferred that story onto Jorah. I also think it's reasonable that Connington switches sides when he sees Dany in his face, all of Rhaegar's sister, being the real deal.

He doesn’t like writing it anymore
I think he really likes the Targaryen’s and Dunk and Egg. He’d write the shyt out of those if he could but the main storyline he stopped caring years ago. It’s why Feast went off the rails. He didn’t care about ice monsters in the North anymore. He wanted to do palace intrigue and follow around minor characters like Brienne musing on war and chapters of Tyrion cracking evil jokes.
On top of that the show ending probably soured him on the ending he had in mind.It's not that he doesn't care, it's that he wrote himself into a corner and can't get out. And while tinkering with that he keeps expanding lore and making chapters focus more on characters discussing history than advancing plot. He's lost, and his editor is clearly not strong enough to reign him in.
I think he's excited about his actual plot but can't get all the characters back on track due to the deviations. Meereen, the Ironborn, Dorne...it's too much shyt without a clear cut A/B/C progression. I also think he knows he has to split TWOW into two books but doesn't want to admit defeat yet.
