I never got the veggie omelettes, too much liquid from the veggies.

Soft scramble with shredded cheese. A little almond milk to soften the texture. Salt and pepper and chopped white onions. I also like to fry my eggs as well.

I usually sear the veggies for about 2-3 minutes before putting on the eggs, that usually helps.

I like them with an omelette with mushrooms, onions, peppers, spinach and a little bit of cheddar.

Or I like em how my momma makes them. Fried and chopped with pepper and some salt and I fry hash browns and corn beef and mix them in with the eggs with some cheese.
