I make mine with a roux then put egg yolks in my sauce then bake. I made it once with the breading on top. It was trash.

Tbh I’m not sure. If I’m gonna be scientific; I would say that the melting of the cheese on top increases umami and the caramelisation kick starts the Maillard reaction. The contrast with the slight bitterness of caramelisation and the tanginess of the cheese is sublime as those two flavours while opposite on the taste spectrum actually work really well together. You don’t have that with the bread crumb version. That extra unctuousness isn’t there.Why was it trash tho?
