But as it appears, we can have some control over our stimuli. Deciding on what to believe, and curbing certain instincts...this in turn translates to the complexity of our consciousness. So it'd be interesting to see how this ability relates to the way our neurons work, if at all.

Then most likely I'm asking the wrong question then. Now, I wonder what's the closest animals to us in terms of neurons and how much different we are from them. Heck, I wonder how we developed the most neurons in the first place.

I don't know the answer to this, but I think its somewhat hard to presume that the number of neurons de facto relates to how complex the species is. At least between closely related species.

complexity is a weird thing because it doesn't necessarily mean "more able" or "better" as many times, other species just have varying degrees of their OWN complexity

I just think its useful to not use the human experience as the standard in that regard

Good point, I do often find myself in awe of other creature's complexities. I definitely wouldn't say humans are better, but we most certainly are quite different from everything else around the planet...at least from what I've gathered in my life so far. I guess that's why I wonder why that's so...but oh well, eventually I'll find the answers I'm looking for. Until then one just has to keep on

Just because words are in dictionaries doesn't mean they maintain their relevance with the latest science.

So, my definition of consciousness for 99% of people who aren't introspective enough to understand that there isn't a "mind" unit may align with what you've posted, but it doesn't mean that in the raw nature of what we're talking about that such a thing may even exist.
