Why exactly is the Democratic establishment so worried about Sanders winning the nomination?

They seem to be as against him as the Republicans were against Trump.

But he's not a lunatic like Donald. What are they afraid of?
Sanders is advocating a move from what the status quo in Washington has been since the 80s. They were scared of Trump because he's stupid but they knew he wouldn't change how things work. Sanders comes in and they're not gonna have that power anymore. And they know he can't be controlled by them (trust they have tried for 30 years) and it frightens them.

It doesn't matter if Bloomberg or Biden wins NC. Neither of them are going to get anywhere close to Bernie's total delegates. The establishment's goal right now is to force a brokered convention where superdelegates can choose whoever the 2nd place nominee is in July.
Seeing as how it's looking like Bernie's gonna sweep Super Tuesday, they're going to need rig a lot more elections than just Iowa to make that happen.

What is he selling tho?

Warm and fuzzy feelings combined with a youthful appeal.

I think we often overrate how little the average American cares or understands actual policy.

He ultimately won’t get anywhere because of the black vote but his delivery is going to resonate with a certain group.
