How do you chop samples like this? Keeping elements of the song but letting it ride throughout with the drums below the sample?

I use Ableton, I'm new to producing

You add a Filter on your sample and or EQ to cut out certain sound frequencies, that allows for more space to place your own musical elements in the instrumental (IE Basslines and clearer Drums.) It will take a bit of practice but with practice you will grab the theory and workings behind the technique.
